I first met Nicole when she won our $25 Amazon gift card giveaway several months ago. We began an email conversation about what she would buy with her giftcard and now we correspond regularly sharing recipe ideas, chatting about our crazy husbands, and catching up on our vacations. I absolutely love having Nicole in my foodie life and enjoy every one of her blog posts. Her pictures are inspiring and her recipes are incredible.
I bookmarked Nicole’s mojito watermelon a while ago but needed a large group of people to eat it. I served it at my husband’s birthday party and it was a huge success. The watermelon cubes are splashed with a lime juice, sugar, and mint mixture just before serving. No more boring watermelon for me! Like Nicole, I served it sans alcohol since there were children present, but I imagine that it would taste great with a little “adult flavor” thrown in as well.

mojito watermelon

1/4 cup sugar
1/4 cup warm water
a pinch of salt
1/4 cup lime juice
2 tsp freshly grated lime zest
1 medium large watermelon (8-10 lbs)
2 T fresh mint, preferably spearmint, finely chopped
In a small bowl, whisk sugar with 1/4 cup warm water and salt until sugar is dissolved. If your sugar won’t dissolve, try microwaving the mixture for 30 seconds. Stir in lime juice and zest. Cover and refrigerate until cool, about 1 hour. (Syrup can be made ahead, chilled and covered for up to 3 days.)
Cube watermelon into 1 inch pieces and refrigerate until cold, about 1 hour. As close to serving time as possible, stir mint into syrup and drizzle over watermelon pieces. Toss. Serve chilled.

You’re so sweet! I love our e-mails, too. It partially confirms that even if I’m crazy when it comes to food, at least I’m in good company.
