I have been taunting my friends for over a year with the recipe for these strawberry rosewater pancakes. I had never heard of rosewater until my dear friend Stacy took me to this trendy brunch place in Berkeley. I began our meal saying, “I don’t like eating brunch in restaurants because they never offer anything that I haven’t made at home.” Little did I know…. Their daily special was strawberry rosewater pancakes, something I had never even heard of! I asked the server if they were any good. “Oh, yes! They’re divine!” was her eager response. Sold! I absolutely loved them! They tasted like Valentine’s Day! They were slightly floral (but not overly so) with thinly sliced berries hidden between the pillows of pancake batter. I came home and immediately began prowling the internet for a recipe. Apparently not many people make strawberry rosewater pancakes, which is lame given how amazingly delicious they are. I cobbled together a couple recipes and have been perfecting the recipe for the past year. These pancakes are our favorite spring and summer breakfast served with warm maple syrup, a dollop of whipped cream, and a plate of crispy bacon.
I had family in town last week and served brunch on Saturday to the whole clan. These pancakes were our “entree” and my aunt and grandma declared them the best pancakes they had ever eaten. Proof’s in the pancakes, folks. Give ‘em a try.
strawberry rosewater pancakes
adapted from www.acozyktichen.com
2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3 tbsp sugar
1/4 tsp salt
1/2 tsp cardamom
2 cups buttermilk
2 large eggs, lightly beaten
2 tbsp unsalted butter, melted
1 tsp vanilla extract
1 tsp rosewater
3 tbsp yogurt or milk (I add this only if the batter looks a little too thick for my preferences)
2 cups thinly sliced strawberries
additional butter or oil for the pan
Preheat oven to 200.
In a large bowl, combine the dry ingredients and whisk to combine.
In another bowl, combine the wet ingredients. Whisk the wet ingredients thoroughly and then add them to the dry ingredients, stirring with a spatula until just mixed. Do not over-mix. It is okay if there are some lumps.
Let the batter rest for 10 minutes. Meanwhile, heat a griddle or cast iron skillet slowly and brush with butter or oil. Once the batter is done resting, pour 1/4 cup of the batter onto the griddle or cast iron skillet. Scatter several strawberries across the top. Dab with more batter to cover the berries. Cook until bubbles form along the sides, about 3 minutes. Flip. Then cook until bottom is browned and pancake is cooked through in the middle.
Place pancake on a plate in the warm oven and repeat with remaining batter. Top with butter, warm maple syrup, and a dollop of sweetened whipped cream.

My friend Jeremy introduced me to cast iron last year and I fell for it hook, line and sinker. I now own almost as much cast iron as I do stainless steel and it’s my go-to cookware of choice. It’s surface is almost 100% non-stick and because it is so heavy, it retains heat very, very well. This makes it perfect for just about anything! I own this skillet and use it for bacon, eggs, pancakes, sauces, meat, stir fries…. the list goes on! Not only that, it’s so easy to clean! I’ve never had any pancakes other than plain and blueberry (both of which are good), but I’d love to try your strawberry rosewater pancakes in that Lodge cast iron pan!

I’m a big fan of crepes and thin pancakes myself. Matt has a family recipe for thin pancakes that comes out pretty fantastic.
I’m not very picky about toppings so sometimes I top it with: just butter and syrup, syrup and whip cream, strawberries
and when I’m feeling really fancy Nutella.
Mostly – pancakes rock. So do waffles :).

My favorite is fresh buttermilk pancakes with banana slices and walnuts folded in & ginger syrup (leftover from making ginger candy) drizzled on top. I let nothing go to waste :O) Orange blossom water is also fun to work with. My friend from Algeria taught me how to make semolina doughnuts that are soaked in honey mixed with orange blossom water. I’ve never used rosewater at all in cooking/baking so these definitely intrigue me! I’d have to say that my favorite pancakes are peach pancakes – especially this time of year when they’re in season around us!

I absolutely love whole wheat honey pancakes topped with fresh peaches!! My Gramma also makes potato pancakes with onions & other veggies in them. She makes them in a cast iron skillet & I have never been able to replicate them. Probably because I do not own a cast iron skillet!!

I can’t decide on a favorite pancake… i eat it often though! I make savory and sweet pancakes so I can eat it for dinner and dessert! But one thing’s for sure, it must be topped with some kind of dairy… butter or cheese or mayo, yum!

I usually use almond milk to make my pancakes, but my favorite are blueberry buttermilk. I’m a pancake snob (REAL maple syrup, please!), and cast iron skillets are the *only* way I cook my pancakes!

I love pumpkin pancakes (especially now that I know how to roast my own pumpkin-thanks!). They are amazing with butter and real maple syrup or with natural pb for a little extra protein. I’m also a big fan of banana pancakes with pineapple and coconut sauce.

I’ve always been more fond of waffles than pancakes (I love that crunch!) but when my little brother went through a pancake craze I was fully on board. Banana pancakes were a massive hit then and pleased much more than blueberry (I don’t care for the tartness and staining). On the inspiration of sweet potato waffles we tried out sweet potato pancakes, to disastrous effect. It’s been a while since I’ve made pancakes, since I gave him my cast iron pans for his future experimenting, but this suggestion of rosewater is more than enough to get me excited and already planning a brunch party.

The best pancakes I ever had were made with freshly-picked wild raspberries. Since we were camping in Hope, AK at the time, we had to wait for the bears to get their fill of the berries first!
