strawberry rosewater pancakes + a Cast Iron Giveaway

I have been taunting my friends for over a year with the recipe for these strawberry rosewater pancakes. I had never heard of rosewater until my dear friend Stacy took me to this trendy brunch place in Berkeley. I began our meal saying, “I don’t like eating brunch in restaurants because they never offer anything that I haven’t made at home.” Little did I know…. Their daily special was strawberry rosewater pancakes, something I had never even heard of! I asked the server if they were any good. “Oh, yes! They’re divine!” was her eager response. Sold! I absolutely loved them! They tasted like Valentine’s Day! They were slightly floral (but not overly so) with thinly sliced berries hidden between the pillows of pancake batter. I came home and immediately began prowling the internet for a recipe. Apparently not many people make strawberry rosewater pancakes, which is lame given how amazingly delicious they are. I cobbled together a couple recipes and have been perfecting the recipe for the past year. These pancakes are our favorite spring and summer breakfast served with warm maple syrup, a dollop of whipped cream, and a plate of crispy bacon.

I had family in town last week and served brunch on Saturday to the whole clan. These pancakes were our “entree” and my aunt and grandma declared them the best pancakes they had ever eaten. Proof’s in the pancakes, folks. Give ‘em a try.

strawberry rosewater pancakes
adapted from

2 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
3 tbsp sugar
1/4 tsp salt
1/2 tsp cardamom

2 cups buttermilk
2 large eggs, lightly beaten
2 tbsp unsalted butter, melted
1 tsp vanilla extract
1 tsp rosewater
3 tbsp yogurt or milk (I add this only if the batter looks a little too thick for my preferences)

2 cups thinly sliced strawberries
additional butter or oil for the pan

Preheat oven to 200.

In a large bowl, combine the dry ingredients and whisk to combine.

In another bowl, combine the wet ingredients. Whisk the wet ingredients thoroughly and then add them to the dry ingredients, stirring with a spatula until just mixed. Do not over-mix. It is okay if there are some lumps.

Let the batter rest for 10 minutes. Meanwhile, heat a griddle or cast iron skillet slowly and brush with butter or oil. Once the batter is done resting, pour 1/4 cup of the batter onto the griddle or cast iron skillet. Scatter several strawberries across the top. Dab with more batter to cover the berries. Cook until bubbles form along the sides, about 3 minutes. Flip. Then cook until bottom is browned and pancake is cooked through in the middle.

Place pancake on a plate in the warm oven and repeat with remaining batter. Top with butter, warm maple syrup, and a dollop of sweetened whipped cream.

___________________________________________GIVEAWAY: LODGE LOGIC 12″ CAST IRON SKILLET___________________________________________

My friend Jeremy introduced me to cast iron last year and I fell for it hook, line and sinker. I now own almost as much cast iron as I do stainless steel and it’s my go-to cookware of choice. It’s surface is almost 100% non-stick and because it is so heavy, it retains heat very, very well. This makes it perfect for just about anything! I own this skillet and use it for bacon, eggs, pancakes, sauces, meat, stir fries…. the list goes on! Not only that, it’s so easy to clean! Just wipe it out with a wet sponge or paper towel and voila! Clean! :) Now that I’m sold on cast iron, I can’t wait for YOU to get hooked on it (if you aren’t already :) ).

I am giving away one 12″ Lodge Cast Iron Skillet. There are multiple ways to win!

  1. Leave a comment below letting me know your favorite kind of pancakes. Be thinking about how fun it will be to cook them in this cast iron skillet!
  2. Leave a separate comment letting me know if you follow me on Facebook.
  3. Leave a separate comment letting me know if you follow me on Twitter.
  4. Leave a separate comment letting me know if you receive our RSS Feed. (See upper right hand corner of the page!)

This giveaway will close at 11:59 p.m. on August 1 and one winner will be chosen using Open to US Residents Only. I’ll contact the lucky winner via email to get your snail mail address, so make sure your email address is correct!

*Please note that Lodge does not even know that I exist. :) I simply give these products away because I believe in them and I believe you will enjoy cooking more as a result of using them!

I’ve never had any pancakes other than plain and blueberry (both of which are good), but I’d love to try your strawberry rosewater pancakes in that Lodge cast iron pan!

  • 2 MelodyJ // Jul 29, 2011 at 1:04 pm

I like Whole Wheat pancakes. I would love to try that cast iron pan.

  • 3 Vanessa // Jul 29, 2011 at 2:13 pm

I’m a big fan of crepes and thin pancakes myself. Matt has a family recipe for thin pancakes that comes out pretty fantastic.

I’m not very picky about toppings so sometimes I top it with: just butter and syrup, syrup and whip cream, strawberries :) and when I’m feeling really fancy Nutella.

Mostly – pancakes rock. So do waffles :).

  • 4 Vanessa // Jul 29, 2011 at 2:15 pm

I also follow this blog on Facebook :). I’ve seen lots of things I’m itching to try to make when I get the chance :) and it’s easy to share recipes with my food-loving bf on there too :)

I like plain buttermilk pancakes served with European style salted butter and a little bit of real cream and real maple syrup poured on top.

  • 6 Roxana S. // Jul 29, 2011 at 4:11 pm

My favorite is fresh buttermilk pancakes with banana slices and walnuts folded in & ginger syrup (leftover from making ginger candy) drizzled on top. I let nothing go to waste :O) Orange blossom water is also fun to work with. My friend from Algeria taught me how to make semolina doughnuts that are soaked in honey mixed with orange blossom water. A sweet and more sophisticated way to enjoy this treat. I follow you on Facebook because I am a big America’s Test Kitchen fan as well & your posts are great! TY

The only pancakes I have ever liked are the ‘Marion’ pancakes on the weekend brunch menu at Chow’s; Ricotta, Raspberries and Lemon, YUM!!

My favorite kind of pancakes are chocolate chip buttermilk pancakes! Delicious! What a great giveaway!

  • 12 Tammy // Jul 29, 2011 at 6:56 pm

My favorite pancake is buttermilk, it’s a southern thing but if I’m feeling like a kid, a sprinkle of chocolate chips.

  • 13 Maya // Jul 29, 2011 at 9:06 pm

My favorite pancakes are buttermilk pancakes with lots of butter and syrup! Pretty simple, but so delicious.

  • 14 Laura // Jul 29, 2011 at 9:40 pm

My favorite pancakes are apple cinnamon pancakes or blueberry pancakes. I prefer fruit toppings on pancakes because I don’t like how soggy syrup makes pancakes.

  • 15 Sara // Jul 29, 2011 at 11:53 pm

My current favorite pancakes are whole wheat oatmeal ones!

  • 16 Julien // Jul 30, 2011 at 12:33 am

I’ve never used rosewater at all in cooking/baking so these definitely intrigue me! I’d have to say that my favorite pancakes are peach pancakes – especially this time of year when they’re in season around us!

  • 23 Candace Dean // Jul 30, 2011 at 7:05 am

I absolutely love whole wheat honey pancakes topped with fresh peaches!! My Gramma also makes potato pancakes with onions & other veggies in them. She makes them in a cast iron skillet & I have never been able to replicate them. Probably because I do not own a cast iron skillet!!

  • 24 Candace Dean // Jul 30, 2011 at 7:07 am

I also receive the rss feed. I remembered another pancake I like, also made by my Gramma. She would make applesauce pancakes and serve them with powdered sugar when we were little. They would get really crispy around the edges. SOOOO good. I may just call her for the recipe & make some this morning.

My all-time favorite pancakes will always be blueberry buttermilk pancakes doused with real, pure maple syrup. Di-vine!

Hi! This is my first time visiting your site and I love it :) I came upon it through Foodgawker.
I can’t decide on a favorite pancake… i eat it often though! I make savory and sweet pancakes so I can eat it for dinner and dessert! But one thing’s for sure, it must be topped with some kind of dairy… butter or cheese or mayo, yum!

  • 33 molly :) // Jul 30, 2011 at 11:27 am

We make a yummy homemade pancake batter, topped with maple syrup or powdered sugar. The girls say I don’t make pancakes nearly enough… :O

  • 34 Rachel L-E // Jul 30, 2011 at 12:07 pm

My favorite pancakes are definitely the graham cracker pancakes my friend and I made a few months ago. So yummy! I would love to make them – and so many other things! – in a cast iron skillet.

  • 38 Teri // Jul 30, 2011 at 2:35 pm

My favorite is good ol’ buttermilk pancakes. :)

  • 39 ironchefman // Jul 30, 2011 at 3:17 pm

I usually use almond milk to make my pancakes, but my favorite are blueberry buttermilk. I’m a pancake snob (REAL maple syrup, please!), and cast iron skillets are the *only* way I cook my pancakes!

  • 40 Shumaila // Jul 30, 2011 at 7:27 pm

My favorite pancakes are blueberry pancakes! Great giveaway!

  • 41 Heidi @ Food Doodles // Jul 30, 2011 at 8:41 pm

Those pancakes look fanastic! I’ve never used rosewater in anything but I can imagine it would be delicious!
What a great giveaway! I love my cast iron pan so much, but it’s not even a very nice one. I think my favorite pancakes are these ones I make with oats, peanut butter, chocolate and banana. Yummy!

  • 42 Claire // Jul 30, 2011 at 11:14 pm

I love cinnamon pumpkin pancakes. My dad made them for me one time out of a pumpkin we grew and I just cherished the memory, lol.

  • 67 Nicholas // Aug 1, 2011 at 8:24 am

I’ve always been more fond of waffles than pancakes (I love that crunch!) but when my little brother went through a pancake craze I was fully on board. Banana pancakes were a massive hit then and pleased much more than blueberry (I don’t care for the tartness and staining). On the inspiration of sweet potato waffles we tried out sweet potato pancakes, to disastrous effect. It’s been a while since I’ve made pancakes, since I gave him my cast iron pans for his future experimenting, but this suggestion of rosewater is more than enough to get me excited and already planning a brunch party.

  • 78 Leslie // Aug 1, 2011 at 12:55 pm

I’m a sucker for Buttermilk Banana Walnut pancakes with warm maple syrup and more sliced bananas on top!

  • 79 Andrea // Aug 1, 2011 at 1:00 pm

Lemon, peach, blueberry, and blueberry-banana are just a few of my faves :) Thanks for the giveaway!

  • 80 Carl // Aug 1, 2011 at 6:17 pm

My favorite “pancakes” would be jonnycakes. I know it’s not REALLY pancake, but there’s just something about hot fresh corn meal cakes with a little butter and honey. I have to limit myself to only a few, or I’d just keep eating them…

  • 81 Jenny // Aug 2, 2011 at 10:39 am

The best pancakes I ever had were made with freshly-picked wild raspberries. Since we were camping in Hope, AK at the time, we had to wait for the bears to get their fill of the berries first!
