This is an easy to prepare, fun dish that is healthy, too! This is my favorite way to eat cucumbers in the summer time. It makes a good snack or a less-traditional side dish at a bbq.
dilled cucumbers
1 medium cucumber, peeled and thinly sliced
salt
1 tbsp sugar
2 tbsp white vinegar
1/4 tsp dried dill weed
Place thinly sliced cucumbers in a colander and sprinkle with salt. Let rest for 15 minutes.

Meanwhile, combine sugar, vinegar, 1/2 tsp salt, and dill in a bowl.

Lightly press the cucumbers with a paper towel to absorb the excess moisture. Mix with dressing. Refrigerate for 1-3 hours to blend flavors. Serve chilled.

I made these tonight for Brad out of “Persian Pickles.” They’re really just little cucumbers, I have no idea why they call them pickles…. Anyway, this was super tasty and very refreshing! Also, way easy, which is always a plus :)
