As a general rule, my philosophy on dessert is, “If it doesn’t have chocolate, why bother?” These cookies break that rule. My mom makes pecan sandies every year for Christmas. They are lightly sweet, deeply buttery and over-the-top delicious. I am so glad that she shared the recipe with me so that I can share it with you. These are simple cookies to make and they are even easier to eat! They hold up well to give away as gifts. Don’t just bake them at Christmas either! They’re delicious all year long!

Prep Time: 7 minutes

Cook Time: 12 minutes

Total Time: 20 minutes

Yield: 6 dozen small

These are my favorite non-chocolate cookies. In fact, they are the ONLY non-chocolate cookies that I will eat!

Ingredients

1 cup soft unsalted butter
1 cup sugar
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
2 cups uncooked oatmeal
1 cup pecans, finely chopped
sea salt

Instructions

  1. Preheat oven to 350.
  2. In a large mixing bowl, cream the butter and sugar until light and fluffy, about 3 minutes. Add the egg and vanilla extract and continue to mix.
  3. Combine the dry ingredients in a separate bowl and add gradually to the wet ingredients. Add the oatmeal and mix. Stir in the pecans. Drop from a teaspoon onto an ungreased cookie sheet. Lightly sprinkle the cookies with salt.
  4. Bake for 15-17 minutes, or until lightly browned. Let cool for a few minutes and then eat all of them! :)

    These look buttery, rich and delicious! So many people don’t like nuts, but I love them!

    I actually hate nuts too. :) These don’t taste like nuts, though. :)

    This looks a little different from the pecan sandie recipe I have on my blog…I’ll have to give this one a try…I LOVE these!
