Just made this today and it was delish! I tried it with and without the brandy, but I should have done them side by side, as I couldn’t tell the difference otherwise I love Cook’s Illustrated so much!

Paula, you’re an excellent “folder” and this was by far some of your best work yet.

Ooooh how I love chocolate mousse. It’s a bit of a tradition around here – Rick usually makes it for Valentines, and often for my Birthday. I’ll request this version next time!
