The best pancakes I ever had were made with freshly-picked wild raspberries. Since we were camping in Hope, AK at the time, we had to wait for the bears to get their fill of the berries first!

My favorite “pancakes” would be jonnycakes. I know it’s not REALLY pancake, but there’s just something about hot fresh corn meal cakes with a little butter and honey. I have to limit myself to only a few, or I’d just keep eating them…

I love fluffy pancakes so I always separate the eggs and beat the whites high – rosewater pancakes, here I come!
