Without it you end up with a taco. So what–it’s all good. I personally like my quesadillas with enough cheese to hold the tortilla together, but a combination of veggies and meat to give it taste. I can’t even list all of the wonderful combos from a simple deal of spinach, onion, chili and a bit of cheese, to my current fave from the last visit to Austin, TX–chopped mango, cilantro, green chilis and cream cheese.
